- Every plant produces several hundred phytonutrients, acting as antioxidants. Antioxidants protect against, oxidants, which are free radicals in the presence of oxidants. Free radicals are nuclear matter with missing electrons. The electrons can damage individual living cells and hasten their aging and dying as in our organs.
- Free radicals are the root cause of the illnesses of old age, such as cancer, atherosclerosis, dimming vision, dementia, arthritis . Heat destroys the bioactivity of antioxidants, but fortunately we can eat most plants raw.
